- 3 to 4 lbs ground beef (80/20 Mix)
- 1 large yellow onion, minced
- 1 medium yellow onion, diced
- 2 to 3 garlic cloves, chopped or crushed
- 2 green peppers, seeded and diced
- 1 poblano pepper, seeded and diced
- 3 or 4 cans (14.5 oz each) fire roasted diced tomatoes
- 1/3 cup chili powder
- 1 tablespoon smoked or regular paprika
- 1/2 teaspoon garlic salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili pepper flakes
- 1/2 teaspoon cinnamon
- Just under 1 tablespoon sugar
- 1/4 teaspoon dried Italian seasoning or oregano
- A little bit of cooking oil or butter
Instructions
- Heat butter or cooking oil in a stock pot. Add minced large onion, diced medium onion, green peppers, poblano pepper, and chopped garlic. Sauté until golden brown and soft.
- Add ground beef to the pot and cook through, breaking the meat into crumbles. Optionally, drain excess fat.
- Season the meat with garlic salt, black pepper, paprika, cinnamon, chili powder, Italian seasoning, chili flakes, and sugar. Sauté for 1-2 minutes.
- Add fire-roasted diced tomatoes into the pot without draining. Stir well and bring to a gentle simmer.
- Lower the heat, cover, and let cook for 120-180 minutes, stirring occasionally.
- Optionally add kidney or black beans when adding tomatoes.
- Serve right away, skimming off excess fat. Can be made a day in advance and stored in the refrigerator.
Notes
This chili can be frozen for up to 3 months and reheated gently. For extra flavor, allow it to sit overnight before serving.
