Ingredients

  • 3 to 4 lbs ground beef (80/20 Mix)
  • 1 large yellow onion, minced
  • 1 medium yellow onion, diced
  • 2 to 3 garlic cloves, chopped or crushed
  • 2 green peppers, seeded and diced
  • 1 poblano pepper, seeded and diced
  • 3 or 4 cans (14.5 oz each) fire roasted diced tomatoes
  • 1/3 cup chili powder
  • 1 tablespoon smoked or regular paprika
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili pepper flakes
  • 1/2 teaspoon cinnamon
  • Just under 1 tablespoon sugar
  • 1/4 teaspoon dried Italian seasoning or oregano
  • A little bit of cooking oil or butter

Instructions

  1. Heat butter or cooking oil in a stock pot. Add minced large onion, diced medium onion, green peppers, poblano pepper, and chopped garlic. Sauté until golden brown and soft.
  2. Add ground beef to the pot and cook through, breaking the meat into crumbles. Optionally, drain excess fat.
  3. Season the meat with garlic salt, black pepper, paprika, cinnamon, chili powder, Italian seasoning, chili flakes, and sugar. Sauté for 1-2 minutes.
  4. Add fire-roasted diced tomatoes into the pot without draining. Stir well and bring to a gentle simmer.
  5. Lower the heat, cover, and let cook for 120-180 minutes, stirring occasionally.
  6. Optionally add kidney or black beans when adding tomatoes.
  7. Serve right away, skimming off excess fat. Can be made a day in advance and stored in the refrigerator.

Notes

This chili can be frozen for up to 3 months and reheated gently. For extra flavor, allow it to sit overnight before serving.
