- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes
- 1/4 cup fresh basil, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine balsamic vinegar, olive oil, garlic, oregano, salt, and pepper.
- Add the chicken breasts to the bowl and marinate for 30 minutes.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Add the marinated chicken to the skillet and sear on both sides until golden brown, about 5 minutes per side.
- Add cherry tomatoes around the chicken in the skillet.
- Pour the remaining marinade over the chicken and tomatoes.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
- Garnish with fresh basil before serving.
Notes
Can be prepared ahead of time by marinating the chicken for up to 4 hours. Refrigerate leftovers in an airtight container for up to 3 days.
