Ingredients

  • 4 medium potatoes, diced
  • 1 cup shredded cheese, cheddar or your choice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant, about 4 to 5 minutes.
  2. Add the ground beef, break it into pieces, and cook until fully browned, stirring occasionally. Season with salt and pepper.
  3. Stir in the diced potatoes and pour in the beef broth, scraping any browned bits from the bottom. Bring to a gentle simmer and cover the skillet.
  4. Let it cook for about 15 to 20 minutes until the potatoes are tender but not falling apart.
  5. Sprinkle the shredded cheese over the top and cover again until the cheese is fully melted and bubbly around the edges.
  6. Serve hot, garnished with chopped parsley or green onions.

Notes

For a different texture, use Yukon Gold potatoes for creaminess or russets for fluffiness. This dish is very adaptable with more vegetables or cheese variations.
