- 4 medium potatoes, diced

- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth

Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant, about 4 to 5 minutes.
- Add the ground beef, break it into pieces, and cook until fully browned, stirring occasionally. Season with salt and pepper.
- Stir in the diced potatoes and pour in the beef broth, scraping any browned bits from the bottom. Bring to a gentle simmer and cover the skillet.
- Let it cook for about 15 to 20 minutes until the potatoes are tender but not falling apart.
- Sprinkle the shredded cheese over the top and cover again until the cheese is fully melted and bubbly around the edges.
- Serve hot, garnished with chopped parsley or green onions.
Notes
For a different texture, use Yukon Gold potatoes for creaminess or russets for fluffiness. This dish is very adaptable with more vegetables or cheese variations.
