Description

Ingredients

  • 12 oz penne pasta
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1/2 cup grated Parmesan (optional)
  • 1 tsp Italian seasoning

Instructions

  1. Add the penne pasta, vegetable broth, cherry tomatoes, zucchini, and bell pepper to a large pot.
  2. Sprinkle the mixture with Italian seasoning.
  3. Bring everything to a boil.
  4. Reduce the heat and let it simmer until the pasta is cooked and the liquid is mostly absorbed.
  5. If desired, stir in the grated Parmesan cheese before serving. Enjoy it warm!
