Description

A delightful dessert featuring fresh peaches topped with a crunchy oat mixture, perfect for summer gatherings.


Ingredients

  • 8 cups peeled and thinly sliced fresh peaches
  • 1/2 cup granulated sugar
  • 1/2 cup plus 2 tablespoons all-purpose flour, divided
  • 1 tablespoon cornstarch
  • 2 teaspoons ground cinnamon, divided
  • 1/4 teaspoon salt
  • 3/4 cup packed light brown sugar
  • 1/2 cup salted butter (1 stick), room temperature
  • 1 3/4 cup old-fashioned oats

Instructions

  1. Preheat the oven to 400°F (200°C). Butter a 9×9 baking pan and set aside.
  2. In a large bowl, mix the sliced peaches, granulated sugar, 2 tablespoons of flour, cornstarch, 1 teaspoon of cinnamon, and salt until well combined.
  3. Pour the peach mixture into the prepared pan and set it aside.
  4. In the same bowl, cream together the brown sugar, the remaining 1/2 cup of flour, butter, and the last teaspoon of cinnamon until a wet, clumpy mixture forms.
  5. Stir in the oats to form a coarse mixture.
  6. Crumble the oat mixture evenly on top of the peaches.
  7. Bake in the oven for 20-25 minutes until the topping turns a light golden color around the edges.
  8. Remove from the oven and let it rest for 10 minutes to cool and set up.
  9. Serve warm with vanilla ice cream if desired.

Notes

For best flavor, use ripe, fresh peaches. This dessert pairs well with vanilla ice cream or whipped cream.
