Instructions

  1. Start by cubing the watermelon into bite-sized pieces. Optionally, use a melon baller for a playful shape. Slice the peaches into wedges or thin slices.
  2. Add the thinly sliced cucumber and chopped fresh mint leaves into a large mixing bowl.
  3. In a small bowl, whisk together the fresh lime juice, honey (if using), and a pinch of sea salt.
  4. Drizzle the dressing over the fruit and toss gently to combine without breaking up the peaches.
  5. Transfer to a serving platter and sprinkle with crumbled feta cheese if desired. Serve chilled or at room temperature.

Notes
