Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 8 ounces brown mushrooms, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 tablespoon cornstarch
  • 1 cup beef broth
  • 8 ounces Provolone Cheese Slices, chopped
  • 6 brioche hamburger buns

Instructions

  1. Heat a large cast iron skillet over medium-high heat.
  2. Add the ground beef and cook until browned before breaking it apart.
  3. Continue cooking until about 50% of the beef has a crust, then remove from skillet.
  4. Add butter, diced onions, bell peppers, and minced mushrooms to the skillet; brown for 1-2 minutes.
  5. Stir the vegetables and brown for another 1-2 minutes.
  6. Return the beef to the skillet with vegetables.
  7. Whisk together beef broth and cornstarch, then pour into the skillet.
  8. Add ketchup, Worcestershire sauce, salt, and pepper; stir to combine.
  9. Cook until thickened, about 3-5 minutes.
  10. Turn off heat and stir in chopped Provolone cheese until melted.
  11. Serve on toasted brioche buns.

Notes

Use lean ground beef to avoid greasy sliders. Brown the vegetables well for added flavor.
