  • 4 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (to adjust consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan (or line with parchment).
  2. In a bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, whisk together the sugar, vegetable oil, and eggs until the mixture is smooth and pale. Stir in the pumpkin puree.
  4. Add the dry ingredients into the wet ingredients and mix until just combined, folding in the chopped nuts if desired.
  5. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted comes out clean. Cover with foil if the top browns too quickly.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the cream cheese frosting, beat the softened cream cheese and butter together until smooth. Gradually add in the powdered sugar, then mix in the vanilla extract. Add milk one tablespoon at a time until you reach the desired consistency.
  8. Once the bread is cool, spread the frosting evenly on top, garnishing with chopped nuts or a sprinkle of cinnamon if desired.
  9. Slice and serve, refrigerating any leftovers for up to 5 days.
