Ingredients

Scale
  • 2 1/4 teaspoons Instant Dry Yeast
  • 6 oz (3/4 cup) Warm Water
  • 50 grams (1/4 cup) Granulated Sugar
  • 2 tablespoons Butter, browned
  • 1 large Egg, at room temperature
  • 1 tablespoon Dry Milk Powder
  • 1 teaspoon Salt
  • 5.3 oz (2/3 cup) Pure Pumpkin Puree
  • 1 tablespoon Pumpkin Pie Spice
  • 406468 grams (3 1/43 3/4 cup) All-Purpose Flour
  • 150 grams (3/4 cup) Brown Sugar
  • 1 1/2 teaspoons Ground Cinnamon
  • 1 1/2 teaspoons Pumpkin Pie Spice
  • 3 oz (6 tablespoons) Butter, browned
  • 4 oz Cream Cheese, softened
  • 2 oz (1/4 cup) Browned Butter, softened
  • 1 tablespoon Pure Vanilla Extract
  • 2 tablespoons Heavy Cream
  • 180 grams (1 1/2 cups) Confectioners Sugar

Instructions

  1. Brown the butter until golden and let it cool.
  2. Mix warm water and yeast in a bowl, let sit for 5-10 minutes until bubbly. Add sugar, browned butter, egg, dry milk powder, salt, pumpkin puree, and pumpkin pie spice. Gradually add flour to form a dough and knead for 5-10 minutes until smooth. Place in a greased bowl, cover, and let rise until doubled in size, about 1-2 hours.
  3. Roll the risen dough into a rectangle; spread browned butter, then sprinkle with brown sugar, cinnamon, and pumpkin pie spice.
  4. Roll the dough tightly, cut into 12 pieces, and place in a greased baking dish. Let rise again for 30 minutes.
  5. Preheat oven to 350°F (175°C) and bake rolls for about 25 minutes or until golden brown.
  6. For the frosting, mix softened cream cheese, browned butter, vanilla, heavy cream, and powdered sugar until smooth. Spread on warm rolls after baking.

Notes

Ensure yeast is fresh, and don’t skip browning the butter for best flavor. Add nuts or raisins for variation.
