Instructions
- Preheat the oven to 400°F, ensuring a centered rack for even heat.
- In a large bowl, combine chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss until evenly coated.
- Spread the mixture on a sheet pan in a single layer, leaving gaps for steam to escape.
- Bake for 20 to 25 minutes, until chicken reaches 165°F and vegetables are tender.
- If desired, broil for an additional 2 to 3 minutes for added char.
- Serve with warm tortillas and toppings.
