- 1 bag of tater tots
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1/2 cup sour cream (optional, for serving)
- Chopped green onions or cilantro (optional, for garnish)
Instructions
- In a slow cooker, brown the ground beef or turkey over medium heat, then drain excess fat.
- Add taco seasoning to the meat and mix well.
- Layer the tater tots on top of the meat mixture, covering the surface.
- In a bowl, combine black beans, corn, and salsa. Pour this mixture over the tater tots.
- Sprinkle cheese on top.
- Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours.
- Serve with sour cream and garnish with green onions or cilantro if desired.
Notes
For a vegetarian version, replace meat with extra beans or a plant-based substitute. Assemble the casserole in advance and refrigerate overnight for easier preparation.
