Description

A comforting and easy slow cooker casserole combining bold taco flavors, crispy tater tots, and melted cheese, perfect for family nights or potlucks.


Ingredients

  • 1 bag of tater tots
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1/2 cup sour cream (optional, for serving)
  • Chopped green onions or cilantro (optional, for garnish)

Instructions

  1. In a slow cooker, brown the ground beef or turkey over medium heat, then drain excess fat.
  2. Add taco seasoning to the meat and mix well.
  3. Layer the tater tots on top of the meat mixture, covering the surface.
  4. In a bowl, combine black beans, corn, and salsa. Pour this mixture over the tater tots.
  5. Sprinkle cheese on top.
  6. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours.
  7. Serve with sour cream and garnish with green onions or cilantro if desired.

Notes

For a vegetarian version, replace meat with extra beans or a plant-based substitute. Assemble the casserole in advance and refrigerate overnight for easier preparation.
