- 4 pound boneless, skinless chicken breasts
- 2 cup shredded mozzarella cheese
- 1 cup sour cream
- 1/2 cup grated Parmesan cheese (plus another 1/4 cup for topping)
- 2 tablespoon cornstarch
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh chopped parsley
Instructions
- Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- In a medium bowl, whisk together the sour cream, 1/2 cup grated Parmesan, cornstarch, oregano, garlic powder, salt, and pepper until smooth.
- Place the chicken breasts in the prepared baking dish in a single layer.
- Top each chicken breast with an even layer of shredded mozzarella cheese.
- Spoon and spread the sour cream mixture over each cheese-topped breast.
- Sprinkle the remaining 1/4 cup of Parmesan cheese across the top.
- Bake uncovered for 45 to 60 minutes, checking at 45 minutes for doneness with an instant-read thermometer (should read 165°F).
- Remove from the oven and let the chicken rest for 5 to 10 minutes before serving.
- Garnish with fresh chopped parsley before serving.
Notes
For better results, pound uneven chicken breasts to a uniform thickness for even cooking.
