Description

A delightful treat that brings the taste of summer into your kitchen with fresh peaches in a moist bread.


Ingredients

  • 1 cup peaches, peeled and diced
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and spray 3 mini loaf pans or 1 large loaf pan with non-stick spray.
  2. In a medium bowl, combine the diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract. Mix well until everything is well blended.
  3. Stir in the flour, baking soda, and salt. Mix until just combined; do not overmix.
  4. Pour the batter evenly into the prepared pans.
  5. Place the pans in the preheated oven.
  6. Bake for 25-30 minutes if using mini loaf pans, or 50-55 minutes if using a large loaf pan.
  7. Remove from oven and allow to cool slightly before slicing and enjoying!

Notes

Serve warm with butter or honey. Best eaten within 2-3 days at room temperature, or frozen for up to three months.
