- 1 cup peaches, peeled and diced
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 2 eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350 degrees Fahrenheit and spray 3 mini loaf pans or 1 large loaf pan with non-stick spray.
- In a medium bowl, combine the diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract. Mix well until everything is well blended.
- Stir in the flour, baking soda, and salt. Mix until just combined; do not overmix.
- Pour the batter evenly into the prepared pans.
- Place the pans in the preheated oven.
- Bake for 25-30 minutes if using mini loaf pans, or 50-55 minutes if using a large loaf pan.
- Remove from oven and allow to cool slightly before slicing and enjoying!
Notes
Serve warm with butter or honey. Best eaten within 2-3 days at room temperature, or frozen for up to three months.
