- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup vegetable oil
- 2 tablespoons unsalted butter, melted
- 2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice (for glaze)
- 1/2 teaspoon lemon zest (for glaze)
Instructions
- Preheat your oven to 350°F. Grease and line a 9×5 inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, whisk together the eggs, sugar, sour cream, oil, and melted butter.
- Stir in the lemon zest, lemon juice, vanilla extract, and lemon extract.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
- Once the loaf is completely cool, drizzle the lemon glaze over the top.
- Slice and enjoy.
Notes
For a sweeter glaze, adjust the amount of powdered sugar. Store in an airtight container for up to 3 days at room temperature.
