- 6 oz salmon fillet
- 1 Tbsp olive oil
- 8 oz refrigerated tortellini
- 1/3 cup cream cheese
- 1 small tomato, chopped
- 1/2 zucchini, chopped
- 1/2 tsp dried dill
- 2 Tbsp fresh basil, chopped
- 2 garlic cloves, minced
- 3 Tbsp mozzarella cheese
Instructions
- Prepare your vegetables and cut the salmon into bite-sized pieces.
- In a large pan, heat 1 Tbsp olive oil over medium heat. Add the salmon, dill, and chopped tomato to the pan.
- Add a tablespoon of water and a pinch of salt. Cover the pan with a lid and cook for 3-4 minutes, or until the salmon is cooked through.
- Stir in the cream cheese and black pepper. If the sauce is too thick, add another tablespoon of water until it becomes creamy.
- Mix in the tortellini and cook according to the package instructions, which is usually 3-4 minutes.
- Lastly, add the minced garlic, chopped basil, chopped zucchini, and stir in the mozzarella cheese.
- Serve immediately, and if you like, sprinkle some Parmesan cheese on top.
Notes
Make sure not to overcook the salmon; it should glide easily with a fork when done. Consider adding more vegetables like spinach or bell peppers for variety.
