Description

A delicious and easy dish that combines the comforting flavors of pasta and fish, topped with a creamy sauce and fresh vegetables.


Ingredients

  • 6 oz salmon fillet
  • 1 Tbsp olive oil
  • 8 oz refrigerated tortellini
  • 1/3 cup cream cheese
  • 1 small tomato, chopped
  • 1/2 zucchini, chopped
  • 1/2 tsp dried dill
  • 2 Tbsp fresh basil, chopped
  • 2 garlic cloves, minced
  • 3 Tbsp mozzarella cheese

Instructions

  1. Prepare your vegetables and cut the salmon into bite-sized pieces.
  2. In a large pan, heat 1 Tbsp olive oil over medium heat. Add the salmon, dill, and chopped tomato to the pan.
  3. Add a tablespoon of water and a pinch of salt. Cover the pan with a lid and cook for 3-4 minutes, or until the salmon is cooked through.
  4. Stir in the cream cheese and black pepper. If the sauce is too thick, add another tablespoon of water until it becomes creamy.
  5. Mix in the tortellini and cook according to the package instructions, which is usually 3-4 minutes.
  6. Lastly, add the minced garlic, chopped basil, chopped zucchini, and stir in the mozzarella cheese.
  7. Serve immediately, and if you like, sprinkle some Parmesan cheese on top.

Notes

Make sure not to overcook the salmon; it should glide easily with a fork when done. Consider adding more vegetables like spinach or bell peppers for variety.
