Fun and spooky vegan hand pies filled with blueberries, perfect for Halloween or any sweet treat craving.
Ingredients
Scale
- 2 sheets of puff pastry (vegan & gluten-free if needed)
- 100g of fresh or frozen blueberries
- 50g of caster or granulated sugar (plus extra for sprinkling)
- 2 tablespoons of cornstarch or cornflour
- 2 teaspoons of lemon juice
- 50g of icing sugar
Instructions
- Preheat your oven to 200°C (400°F).
- In a bowl, mix the blueberries, sugar, cornstarch, and lemon juice. Stir gently until well coated.
- Roll out the puff pastry sheets on a flat surface and cut out ghost shapes using a cookie cutter.
- Place a spoonful of the blueberry mixture in the center of half of the ghost shapes.
- Cover with the remaining ghost shapes and press the edges together to seal, using a fork to crimp edges if desired.
- Place the hand pies on a baking tray lined with parchment paper and sprinkle with extra sugar.
- Bake for about 15-20 minutes or until golden brown.
- Let cool slightly, then mix icing sugar with a little water and drizzle over the cooled hand pies.
Notes
Ensure to seal the edges well and experiment with different shapes and fillings.
