Description

A delightful and wholesome vegetable lasagna packed with fresh veggies, creamy cheese, and delicious marinara sauce, perfect for sharing with family or friends.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 3 cups marinara sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach leaves, chopped
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook the lasagna noodles according to package directions until they are al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 1 minute.
  4. Add sliced mushrooms, dried thyme, salt, and pepper. Cook until mushrooms are tender and liquid evaporates. Stir in chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  5. Layer a thin layer of marinara sauce in the bottom of the baking dish. Add 3 lasagna noodles on top. Top with half of the ricotta cheese, half of the mushroom mixture, and a third of the mozzarella and Parmesan cheese.
  6. Repeat layers with remaining noodles, ricotta, mushrooms, and cheeses. Finish with remaining marinara sauce on top.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  8. Let cool for a few minutes before serving. Garnish with fresh basil leaves.

Notes

For a gluten-free version, use gluten-free lasagna noodles or thinly sliced vegetables as layers.
