- 2 cups grated zucchini (about 2 small zucchinis)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract

- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, sugar, and oil until smooth. Stir in the vanilla extract.
- Fold in the grated zucchini until well combined.
- Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Notes
Make sure to drain excess moisture from the grated zucchini to avoid soggy bread. Feel free to add nuts or chocolate chips for extra flavor.
