Ingredients
  

  • 1 lb boneless chicken breast diced
  • 1/2 cup cornstarch
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tbsp honey
  • 2 tbsp oil for frying
  • 2 cups cooked jasmine rice
  • 1/2 cup shredded carrots
  • 1/2 cup diced cucumber
  • Green onions & sesame seeds for garnish

Instructions
 

  • Make the Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Set aside.
  • Prep the Chicken: Pat the chicken dry and toss with cornstarch until evenly coated.
  • Cook the Chicken: Heat oil in a skillet over medium-high heat. Add chicken and cook for 7–9 minutes, turning to brown all sides until crispy and cooked through.
  • Add the Sauce: Remove from heat and toss the hot chicken with the prepared sauce until well coated.
  • Assemble the Bowl: Divide cooked jasmine rice into bowls. Top with saucy chicken, shredded carrots, cucumber, green onions, and sesame seeds.
  • Serve: Enjoy immediately while warm and crispy. Add extra sauce or toppings if desired.
