- 3 lbs beef chuck roast or a mix of short ribs and brisket
- 4-5 dried guajillo chilies
- 2-3 dried ancho chilies
- 1-2 dried chipotle chilies
- 3 Roma tomatoes
- 1 large white onion chopped
- 4-5 garlic cloves
- 4 cups beef broth
- 2 tbsp apple cider vinegar
- 1 tsp ground cumin
- 1 tsp oregano
- 2 bay leaves
- 1 small cinnamon stick optional
- 1 tbsp salt or to taste
- 1 tsp black pepper
- 1 tbsp smoked paprika
- 1 tbsp olive oil
- Corn tortillas for assembling
- 2 cups shredded Oaxaca or mozzarella cheese
Step 1: Prepare the Birria Stew
Toast dried chilies in a pan until fragrant.
Blend chilies, tomatoes, onion, and garlic with beef broth to create a smooth sauce.
Sear the beef in a large pot, then pour in the chili sauce.
Add vinegar, bay leaves, cinnamon stick, and seasonings.
Simmer on low heat for 3-4 hours until meat is fall-apart tender.
Step 3: Assemble the Tacos
Dip tortillas in the consommé, then fill with shredded beef and cheese.
Fold the tortillas in half to form the tacos.
