Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 pound breakfast sausage cooked and crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • Salt and pepper to taste
  • 2 cups biscuit mix
  • 2/3 cup milk for the biscuits
  • 1/4 cup melted butter for brushing

Instructions

  • Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  • Prepare the Casserole Base: In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cooked sausage, bell peppers, onions, and shredded cheese. Mix well.
  • Assemble the Casserole: Grease a 9x13-inch baking dish. Pour the egg mixture evenly into the dish.
  • Make the Biscuit Topping: In another bowl, combine the biscuit mix and milk to form a soft dough. Spoon the biscuit dough over the egg mixture, covering it as evenly as possible.
  • Bake: Place the casserole in the oven and bake for 30-35 minutes, or until the biscuits are golden brown and the eggs are set.
  • Serve: Let it cool slightly before serving. Brush the biscuits with melted butter for extra flavor.
