- 2 cups penne pasta or any preferred pasta
- 2 boneless skinless chicken breasts (cut into bite-sized pieces for faster cooking)
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes optional
- 1/2 cup chicken broth
- 1 tablespoon butter
- 2 tablespoons fresh parsley chopped
Cook the pasta in salted boiling water for 8–10 minutes until al dente. Drain and set aside.
Meanwhile, cook the chicken: Heat olive oil in a large pan over medium-high heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook for 5–6 minutes, stirring occasionally, until fully cooked.
Reduce heat to medium, add butter and garlic, and cook for 30 seconds. Pour in chicken broth and heavy cream, stirring to combine.
Add cheddar and Parmesan cheese, stirring until melted into a smooth, creamy sauce. (Add red pepper flakes if desired.)
Return cooked pasta to the pan and toss in the cheese sauce until fully coated.
Garnish with fresh parsley and serve warm.
