Ingredients
  

  • 2 cups penne pasta or any preferred pasta
  • 2 boneless skinless chicken breasts (cut into bite-sized pieces for faster cooking)
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Cook the pasta in salted boiling water for 8–10 minutes until al dente. Drain and set aside.
  • Meanwhile, cook the chicken: Heat olive oil in a large pan over medium-high heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook for 5–6 minutes, stirring occasionally, until fully cooked.
  • Reduce heat to medium, add butter and garlic, and cook for 30 seconds. Pour in chicken broth and heavy cream, stirring to combine.
  • Add cheddar and Parmesan cheese, stirring until melted into a smooth, creamy sauce. (Add red pepper flakes if desired.)
  • Return cooked pasta to the pan and toss in the cheese sauce until fully coated.
  • Garnish with fresh parsley and serve warm.
