Ingredients
  

  • 1 ½ lbs ground chicken
  • 1 cup breadcrumbs panko or Italian-style
  • 1 egg
  • ½ cup grated Parmesan cheese
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ cup milk

For the Glaze:

  • cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard

Instructions
 

  • Preheat and Prep: Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  • Mix Ingredients: In a large bowl, combine ground chicken, breadcrumbs, egg, Parmesan, Worcestershire sauce, onion, garlic, salt, pepper, paprika, oregano, thyme, and milk. Mix gently.
  • Shape the Meatloaf: Form the mixture into a loaf and place it in the loaf pan or baking sheet.
  • Make the Glaze: In a small bowl, whisk ketchup, brown sugar, and Dijon mustard. Spread half over the meatloaf.
  • Bake: Bake for 45-50 minutes until the internal temp reaches 165°F (74°C). Brush with remaining glaze halfway through.
  • Rest & Serve: Let rest for 5-10 minutes before slicing. Serve warm and enjoy!
