  • 1 can 13.5 oz coconut milk
  • 2 limes zested and juiced
  • 2 cloves garlic minced
  • 1 tsp ground ginger
  • 1 tsp honey
  • Salt and pepper to taste

  • Heat the Oil: In a large, deep skillet, heat 2 tablespoons of olive oil over medium heat until shimmering but not smoking. This helps create a flavorful base for searing the chicken.
  • Sear the Chicken: Season 4 boneless, skinless chicken breasts generously with salt and pepper on both sides. Place them in the hot skillet and sear for 3–4 minutes per side until the exterior is golden brown and slightly crispy. This locks in moisture and adds depth of flavor. Remove the chicken and set aside on a plate.
  • Sauté Aromatics: In the same skillet, add 3 minced garlic cloves and 1 tablespoon of freshly grated ginger. Stir constantly for about 1 minute until fragrant and lightly golden—this releases their natural oils and builds aroma.
  • Create the Sauce: Pour in 1 can (13.5 oz) of full-fat coconut milk, followed by the juice and zest of 2 limes, and 1 tablespoon of honey for subtle sweetness. Stir everything together until fully combined, scraping the bottom of the skillet to deglaze and release all the browned bits (flavor bombs!).
  • Simmer to Perfection: Return the seared chicken to the pan, nestling it into the sauce. Reduce heat to low, cover, and simmer for 10–15 minutes, or until the chicken is cooked through (internal temp of 165°F/74°C) and the sauce has thickened into a creamy, luscious consistency.
