- 2 cups rotini pasta or bowtie, penne
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 cup diced red bell pepper
- 1/2 cup diced cucumber
- 1/2 cup cherry tomatoes halved
- 1/4 cup finely chopped red onion
- 1/4 cup shredded carrots
- 1/4 cup chopped fresh parsley
Cook rotini pasta until al dente, drain, and rinse under cold water.
In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, vinegar, sugar, salt, and pepper.
