  • 12 oz rigatoni pasta
  • 1 lb Italian sausage casings removed
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ tsp red pepper flakes optional
  • Fresh parsley for garnish
  • Salt and black pepper to taste

Instructions
 

  • Cook the Pasta: Boil rigatoni in salted water until al dente. Reserve 1 cup pasta water, then drain.
  • Brown the Sausage: In a skillet, cook sausage over medium heat until crispy. Add garlic and red pepper flakes; sauté for 1 minute.
  • Make the Sauce: Reduce heat to low. Stir in heavy cream and Parmesan until the sauce thickens (2-3 minutes).
  • Combine: Toss cooked pasta into the skillet. Add reserved pasta water as needed to loosen the sauce.
  • Serve: Garnish with parsley, extra Parmesan, and black pepper.
