- 2 large boneless chicken breasts cut into bite-sized pieces
- 12 oz fettuccine or spaghetti cooked al dente
- 4 cloves garlic minced
- 1 cup freshly grated parmesan cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 2 tablespoons butter
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley optional, for garnish
Fill a large saucepan with salted water and bring to a boil. Cook pasta until al dente. Reserve 1/4 cup of pasta water and drain.
Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked. Set aside.
In the same skillet, melt butter, add minced garlic, and sauté until fragrant.
Stir in chicken broth and heavy cream; bring to a gentle simmer. Add parmesan cheese and stir until smooth and creamy.
Return cooked chicken and pasta to the skillet. Toss well, adding reserved pasta water as needed to adjust sauce consistency.
