  • 3 ripe bananas mashed
  • 1/3 cup coconut oil melted or unsweetened applesauce for a healthier option
  • 1/2 cup honey or maple syrup
  • 2 large eggs or flax eggs for vegan option
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chocolate chips optional
  • 1/4 cup chopped nuts optional

Instructions
 

  • Preheat Your Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  • Mash the Bananas: In a large bowl, mash the ripe bananas until smooth. A few lumps are okay!
  • Mix Wet Ingredients: Add melted coconut oil (or applesauce), honey (or maple syrup), eggs, and vanilla extract to the bananas. Mix until well combined.
  • Combine Dry Ingredients: In another bowl, whisk together the gluten-free flour, baking soda, salt, and cinnamon.
  • Combine Wet and Dry Mixtures: Slowly add the dry ingredients to the wet mixture, mixing gently until just combined. Avoid overmixing.
  • Add Extras: If desired, fold in chocolate chips or nuts.
  • Fill Muffin Tins: Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  • Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and Enjoy: Let the muffins cool in the tin for a few minutes before transferring them to a wire rack. Enjoy warm or at room temperature!
