Ingredients

  • 1 lb Italian sausage mild or spicy
  • 1 yellow onion diced
  • 4 garlic cloves minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • 2 tbsp tomato paste
  • 1 28 oz can crushed tomatoes
  • 4 cups chicken broth
  • 8 lasagna noodles broken into large pieces
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions
 

  • Brown the sausage: In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and break it up into bite-sized pieces with a wooden spoon. Cook for about 6–8 minutes, until the sausage is browned and fully cooked through. This step lays the flavorful foundation for the soup, so let the sausage develop a bit of color!
  • Sauté the aromatics: Stir in the diced onion and cook for 4–5 minutes, until soft and translucent. Add the minced garlic, Italian seasoning, and red pepper flakes (if using). Stir everything together and cook for 1 more minute until the garlic is fragrant. Your kitchen will already smell incredible!
  • Build the soup base: Add the tomato paste to the pot and stir it into the sausage and onions, letting it cook for 1–2 minutes to deepen the flavor. Then pour in the crushed tomatoes and chicken broth, scraping up any browned bits from the bottom of the pot. Stir well and bring the mixture to a gentle boil.
  • Cook the noodles: Add the broken lasagna noodles directly into the pot. Reduce the heat slightly and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender but not mushy. Be sure to stir a few times to prevent the noodles from sticking together or to the bottom.
  • Finish the soup: Lower the heat and slowly stir in the heavy cream to make the soup luxuriously smooth and rich. Taste and season with salt and freshly ground black pepper as needed.
  • Serve and enjoy: Ladle the hot soup into bowls and top each serving with a scoop of ricotta cheese, a generous sprinkle of shredded mozzarella, and freshly grated Parmesan. The cheeses will melt into the soup and create that gooey, lasagna-like experience with every spoonful. Serve with warm crusty bread for the ultimate cozy meal!
