  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning basil, oregano, thyme
  • 1/2 cup chicken broth
  • 8 oz fettuccine pasta or your favorite pasta shape
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish optional

Cook the Chicken

  • Begin by preheating your oven to 375°F (190°C). Season the chicken breasts with a generous pinch of salt, pepper, and a sprinkle of Italian seasoning. Warm the olive oil in a large oven-safe skillet over medium-high heat. Brown the chicken on each side for 3-4 minutes until golden. Once seared, place the skillet in the oven and bake for about 20-25 minutes, or until the chicken reaches 165°F (75°C) internally. Allow the chicken to rest for 5 minutes before slicing it into strips.

Prepare the Pasta

  • While the chicken bakes, cook the fettuccine pasta according to the package instructions. Drain and set it aside until ready to toss with the sauce.

Make the Creamy Sauce

  • Lower the heat to medium in the same skillet used for the chicken. Add the minced garlic to the pan and sauté for about a minute, until it releases its aroma. Then, mix in the sun-dried tomatoes and cook for another minute. Then, pour in the heavy cream, chicken broth, and Parmesan cheese. Mix everything together until the sauce becomes smooth and creamy.

Combine and Serve

  • Add the cooked pasta to the skillet and toss it to coat with the creamy sauce. Slice the chicken into thin pieces and arrange it on top of the pasta. For an added touch, garnish with fresh basil or parsley, and serve immediately.
