  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 tablespoons melted butter or coconut oil

Instructions
 

Step 1: Prepare the Batter

  • In a mixing bowl, combine the flour, baking powder, and sugar. Whisk together until evenly mixed.
  • In another bowl, whisk the egg. Then add the buttermilk, melted butter, and vanilla extract. Mix well until combined.
  • Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Step 2: Preheat the Griddle

  • Heat a non-stick skillet or griddle over medium-low heat.
  • Lightly grease the surface with a bit of butter or oil to prevent sticking.

Step 3: Cook the Pancakes

  • Using a small measuring cup (about 2 tablespoons), pour the batter onto the hot griddle.
  • Space them apart to allow for spreading.
  • Cook until bubbles form on the surface of the pancakes and the edges look set (about 1-2 minutes).
  • Carefully flip the pancakes using a spatula. Cook for another 30 seconds to 1 minute, until golden brown.

Step 4: Serve and Enjoy

  • Remove the cooked mini pancakes from the griddle and place them on a plate.
  • Repeat the cooking process with the remaining batter.
