- 1 cup rolled oats
- ½ cup creamy peanut butter
- ¼ cup honey or maple syrup
- 2 tablespoons unsalted butter or plant-based alternative
- 1 teaspoon vanilla extract
- Pinch of salt
Melt and Mix : In a medium saucepan over low heat, combine the peanut butter, honey (or syrup), cocoa powder, and butter. Stir gently until everything is melted and well combined.
Add Vanilla & Salt : Once the mixture is smooth, remove from heat and stir in the vanilla extract and a pinch of salt. This will boost the flavors!
Oats Time : Stir in the rolled oats until they’re fully coated in the peanut butter mixture. The oats give these cookies their chewy texture, while the peanut butter delivers all the creamy goodness.
Scoop & Shape : Drop spoonfuls of the mixture onto a parchment-lined baking sheet. You can make them as big or small as you like. Press down lightly to form cookie shapes.
Chill : Pop the cookies in the fridge for about 20-30 minutes to firm up. No need to bake—just let the fridge do the work !
