Ingredients
  

  • 2 boneless skinless chicken breasts (or thighs for extra juiciness)
  • 1 cup long-grain white rice uncooked
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

  • Prep the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-6 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set it aside.
  • Sauté the Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
  • Cook the Rice: Add the rice to the skillet and stir to coat with the onion and garlic mixture. Pour in the chicken broth and bring to a simmer. Cover and reduce heat to low. Cook for 15-20 minutes, until the rice is tender and the liquid is absorbed.
  • Make the Creamy Sauce: Stir in the heavy cream and parmesan cheese. Allow the sauce to thicken as the cheese melts.
  • Combine and Serve: Slice the cooked chicken into strips and nestle it into the creamy rice. Garnish with chopped parsley if desired. Serve immediately.
