Ingredients
  

  • 1 lb boneless chicken thighs or breasts cut into chunks
  • 2 –3 cups cooked white or brown rice
  • ½ cup honey BBQ sauce
  • 2 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ medium onion chopped
  • ½ cup diced bell peppers optional
  • 1 –2 tbsp olive oil or butter
  • Salt & pepper to taste
  • 2 tbsp chopped fresh parsley optional, for garnish
  • ½ cup shredded cheddar cheese optional

Instructions
 

  • Prep the Chicken: Toss diced chicken in a bowl with BBQ sauce, honey, garlic powder, smoked paprika, salt, and pepper. Let marinate for 15–20 minutes.
  • Sauté Aromatics: Heat oil in a skillet over medium heat. Sear chicken for 4–5 minutes, then add onion and optional bell peppers. Sauté 3 more minutes.
  • Combine & Simmer: Add cooked rice and ¼ cup water or broth. Stir to coat, cover, and simmer on low heat for 8–10 minutes.
  • Final Touches: Stir, taste, and adjust seasoning. Top with parsley and optional cheese before serving.
