Ingredients
  

  • 1 lb ground beef 80/20 blend
  • 1 medium yellow onion thinly sliced
  • 8 slices rye bread
  • 8 slices Swiss cheese or cheddar
  • 4 tablespoons butter softened
  • Salt and pepper to taste
  • Optional: Thousand Island dressing for spreading

Instructions
 

  • Caramelize the onions: In a skillet over medium heat, cook sliced onions in 1 tablespoon of butter until soft and golden brown, about 8 minutes.
  • Form and season patties: Divide ground beef into 4 thin, wide patties. Season both sides with salt and pepper.
  • Cook the patties: In the same skillet, cook patties for 3–4 minutes per side until cooked through and browned. Set aside.
  • Assemble the sandwiches: On each slice of bread, place cheese, cooked patty, caramelized onions, and more cheese. Top with another slice of bread.
  • Grill the melts: Spread softened butter on outer sides of each sandwich. Grill in a skillet over medium heat for 2–3 minutes per side until golden and crispy.
  • Serve: Slice in half and serve hot with fries, pickles, or your favorite dipping sauce.
