- 1 cup creamy peanut butter
- 1 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt

Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, beat together the peanut butter, brown sugar, and egg until smooth and creamy.
Stir in the vanilla extract, baking soda, and salt until combined.
Slowly fold in the flour, making sure it's well combined. (If you're adding oats, fold them in at this point.)
Use a spoon or cookie scoop to form rounded balls of dough and place them on the baking sheet. Space them about 2 inches apart.
Gently press down each cookie with a fork to make a crisscross pattern on top.
Bake for 10-12 minutes, or until the edges are lightly browned, and the center is still soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
