Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • Optional: 1 cup rolled oats for added texture for Peanut Butter Oatmeal Cookies

Instructions
 

  • Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat together the peanut butter, brown sugar, and egg until smooth and creamy.
  • Stir in the vanilla extract, baking soda, and salt until combined.
  • Slowly fold in the flour, making sure it's well combined. (If you're adding oats, fold them in at this point.)
  • Use a spoon or cookie scoop to form rounded balls of dough and place them on the baking sheet. Space them about 2 inches apart.
  • Gently press down each cookie with a fork to make a crisscross pattern on top.
  • Bake for 10-12 minutes, or until the edges are lightly browned, and the center is still soft.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
