  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar

For the Filling:

  • 24 oz 3 packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice optional, for extra flavor

Instructions
 

Prepare the Crust:

  • Preheat your oven to 325°F (165°C).
  • In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  • Press the mixture into the bottom of a springform pan to form an even layer.
  • Bake for 10 minutes, then let cool.

Make the Filling:

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add sugar and mix until fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract and lemon juice until combined.

Bake the Cheesecake:

  • Pour the filling over the cooled crust.
