- 4 cups whole milk
- 1 cup heavy cream
- 3-4 tablespoons lemon juice or white vinegar
- 1/2 teaspoon salt
1- Gather Your Ingredients :
Before you start, make sure you have all your ingredients ready: 4 cups of whole milk, 1 cup of heavy cream, 3-4 tablespoons of lemon juice or white vinegar, and 1/2 teaspoon of salt. This will help everything go smoothly.
2- Prepare the Milk :
In a large, heavy-bottomed saucepan, combine the whole milk and heavy cream. Stir gently to mix.
Place the saucepan over medium heat. Slowly bring the mixture to a simmer, stirring occasionally to prevent it from scorching on the bottom. You want the mixture to reach between 180°F and 195°F (just before boiling). You can use a food thermometer for accuracy.
3- Add the Acid :
Once the milk and cream mixture reaches the desired temperature, remove the saucepan from the heat.
Quickly add the lemon juice or white vinegar, stirring gently for about 30 seconds. You should start to see curds forming as the milk solids separate from the whey.
5- Separate the Curds :
After resting, you’ll notice distinct curds floating in the whey. To separate them, place a fine-mesh strainer or cheesecloth over a bowl.
Carefully ladle or pour the curds and whey mixture into the strainer. Allow the curds to drain for about 5-10 minutes, depending on how creamy you want your ricotta to be. For a drier texture, let it drain longer.
Helpful Tips
- Quality Matters: Use fresh, high-quality whole milk and heavy cream for the best flavor and texture.
- Temperature Control: Keep an eye on the heating process to ensure the perfect curd formation.
Substitutions and Variations
- Milk Types: Feel free to experiment with different types of milk (sheep, goat, buffalo) for unique flavors.
- Vinegar: You can substitute lemon juice with white vinegar if preferred.
