  • 4 cups whole milk
  • 1 cup heavy cream
  • 3-4 tablespoons lemon juice or white vinegar

1- Gather Your Ingredients :

  • Before you start, make sure you have all your ingredients ready: 4 cups of whole milk, 1 cup of heavy cream, 3-4 tablespoons of lemon juice or white vinegar, and 1/2 teaspoon of salt. This will help everything go smoothly.

2- Prepare the Milk :

  • In a large, heavy-bottomed saucepan, combine the whole milk and heavy cream. Stir gently to mix.
  • Place the saucepan over medium heat. Slowly bring the mixture to a simmer, stirring occasionally to prevent it from scorching on the bottom. You want the mixture to reach between 180°F and 195°F (just before boiling). You can use a food thermometer for accuracy.

3- Add the Acid :

  • Once the milk and cream mixture reaches the desired temperature, remove the saucepan from the heat.
  • Quickly add the lemon juice or white vinegar, stirring gently for about 30 seconds. You should start to see curds forming as the milk solids separate from the whey.

4- Let it Sit :

  • Cover the saucepan with a lid and let it sit undisturbed for about 5-10 minutes. This resting time allows the curds to fully develop and separate from the whey.

5- Separate the Curds :

  • After resting, you’ll notice distinct curds floating in the whey. To separate them, place a fine-mesh strainer or cheesecloth over a bowl.
  • Carefully ladle or pour the curds and whey mixture into the strainer. Allow the curds to drain for about 5-10 minutes, depending on how creamy you want your ricotta to be. For a drier texture, let it drain longer.

6- Season the Ricotta :

  • Once drained, transfer the curds to a bowl. Add the salt and gently mix with a spatula or spoon. Taste and adjust seasoning if needed. This is your chance to infuse flavor into the ricotta!

7- Enjoy :

  • Your homemade ricotta cheese is now ready to use! Enjoy it fresh, or store it in an airtight container in the fridge for up to 5 days.
