  • 1 pound 450g ground beef
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 can 15 oz of red kidney beans, rinsed and well-drained
  • 1 can 14.5 oz diced tomatoes with juice
  • 1 cup frozen corn kernels
  • 3-4 medium potatoes thinly sliced (Yukon Gold or red potatoes recommended)
  • 1 can 10.5 oz condensed cream of mushroom soup
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • 1 cup shredded cheddar cheese optional topping
  • Fresh parsley or chives chopped (optional garnish)

Instructions
 

  • Brown the Meat: In a skillet over medium heat, cook ground beef with chopped onions until fully browned. Add garlic and sauté for 1 minute.
  • Layer in Slow Cooker: Place sliced potatoes at the bottom, followed by the beef mixture, kidney beans, corn, diced tomatoes, and seasonings. Pour soup over the top and spread evenly.
  • Cook Low and Slow: Cover and cook on Low for 6 hours or High for 3-4 hours, until potatoes are tender.
  • Final Touch: Sprinkle shredded cheese and fresh herbs before serving, if desired.
