- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 small onion finely chopped
- 2 garlic cloves minced
- 1 cup chicken broth
- ½ cup heavy cream
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- 4 cups fresh spinach or 1 cup thawed frozen spinach
- 2 tablespoons butter
- 2 oz cream cheese
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
Season the Chicken : Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
Sear the Chicken : Heat a skillet over medium heat and cook the chicken for 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
