Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach or ½ cup frozen, thawed and squeezed dry
  • 1/2 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 2 garlic cloves minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • Toothpicks or kitchen twine to secure

Instructions
 

  • Prep the Chicken: Slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Make the Filling: In a bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper.
  • Stuff: Spoon the filling into each chicken pocket and secure with toothpicks.
  • Season and Sear: Sprinkle paprika on the chicken. Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 3–4 minutes per side until golden.
  • Bake: Transfer to a preheated oven at 375°F (190°C) and bake for 15–20 minutes, or until the internal temperature reaches 165°F (74°C).
  • Serve: Rest the chicken for 5 minutes before serving.
