Ingredients
  

  • 4 cups mashed sweet potatoes about 3–4 large sweet potatoes
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup milk
  • ¼ cup unsalted butter melted
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 2 cups mini marshmallows

Instructions
 

  • Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with butter or non-stick spray to prevent sticking.
  • In a large mixing bowl, mash the cooked sweet potatoes until smooth and lump-free. You can use a potato masher or hand mixer for extra creaminess.
  • Add in the sugar, eggs, milk, melted butter, vanilla extract, ground cinnamon, and salt. Mix well until everything is fully incorporated and the mixture becomes creamy and silky.
  • Pour the sweet potato mixture into the greased baking dish. Use a spatula to smooth the top evenly so it bakes uniformly.
  • Generously sprinkle mini marshmallows over the top of the sweet potato base, covering it fully for that golden, gooey topping.
  • Bake uncovered for 25–30 minutes, or until the marshmallows are beautifully golden brown and slightly crispy, and the casserole is heated through.
  • Let it rest for 5 minutes before serving. The marshmallows will firm up slightly while still being soft and melty. Serve warm and enjoy the creamy-sweet, fluffy perfection!
